To safely and thoroughly clean the deep fryer, ensuring:

  • Oil quality remains high

  • Fire risk is reduced

  • Food does not taste burnt or greasy

  • Equipment performs efficiently

Daily Fryer Cleaning Steps

1. Filter the Oil (or Dispose if Spent)

  • Let oil cool to safe temperature (~50–60°C).

  • Use oil filter machine or carefully pour oil through a filter cone into a clean container.

  • Store filtered oil in a labelled, covered container.

2. Remove Debris

  • Use a fryer scoop to remove loose food particles from the fryer well.

3. Wipe Exterior

  • Spray BS EN 1276 food-safe degreaser on the fryer exterior (cool to the touch).

  • Wipe with a damp cloth, focusing on handles, knobs, and splashes.

4. Clean Baskets

  • Soak baskets in hot soapy water.

  • Scrub using a nylon brush, rinse thoroughly, and allow to air dry.


🔁 Weekly Deep Cleaning ("Boil Out")

Always refer to the fryer manufacturer’s manual before boiling out.

Step 1: Drain Oil Completely

  • Ensure oil is fully drained and discarded or filtered/stored.

Step 2: Scrape & Rinse Interior

  • Use a fryer cleaning brush to remove hardened oil and debris.

Step 3: Fill with Hot Water + Degreaser

  • Fill fryer up to oil line with hot water.

  • Add fryer-safe degreasing solution (follow dilution instructions).

Step 4: Boil Out

  • Turn fryer on and bring water to gentle boil (10–15 mins).

  • Turn off and let cool fully.

Step 5: Drain, Scrub, and Rinse

  • Drain water safely.

  • Scrub interior walls with long-handled brush.

  • Rinse with fresh, clean water at least twice.

Step 6: Dry Thoroughly

  • Wipe down with clean cloths and let air dry.

  • Moisture left behind can cause oil splatter or degradation.

Step 7: Refill with Fresh Oil

  • Pour in clean, high-quality oil and preheat fryer as normal.

  • Record oil change in your maintenance log.

  • Never use water on hot oil.

  • Never mix cleaning chemicals or use bleach on fryers.

  • Ensure fryer is completely dry before turning it back on.

  • Always use BS EN 1276-certified cleaners for food-contact areas.

  • Dispose of used oil in line with local environmental regulations.
