Objective
To safely and effectively clean grease-laden extraction filters (also called baffle filters or grease filters) in commercial kitchen canopy hoods, helping reduce:
Fire risk
Poor ventilation
Grease drips or odours
Equipment damage
Tools & Supplies Needed
Item | Purpose |
BS EN 1276-certified degreaser | Kills bacteria and dissolves grease |
Hot water (sink or soak tank) | Helps break down buildup |
Large sink or soak tank | For soaking filters |
Long-handled brush or scouring pad | Scrubbing stubborn grease |
Gloves (chemical-resistant) | Protect hands from degreaser |
Goggles (optional) | Prevent chemical splash in eyes |
Towel rack or drying area | For air-drying filters |
Dishwasher (if hood-rated filters are dishwasher safe) | Optional |
Cleaning Frequency
Area | Frequency |
Light use (1–2 hours/day) | Every 2 weeks |
Medium use (3–6 hours/day) | Weekly |
Heavy use (6+ hours/day) | Twice weekly or more |
Deep clean/certified hood service | Every 3–6 months (by contractor) |
Step-by-Step: Manual Cleaning Method
1. Turn Off Extraction System
Ensure the extraction fan is off before removing filters.
2. Remove Filters Safely
Use both hands to lift and tilt each baffle filter out of the hood frame.
Place in a sink, soak tank, or safe worktop — avoid dropping or denting.
3. Pre-Rinse with Hot Water
Rinse each filter with hot water to soften grease and food debris.
Use moderate pressure, avoid using jet sprays that could damage mesh or baffles.
4. Soak in Degreasing Solution
Fill a large sink or soak tank with hot water and food-safe degreaser.
Submerge filters and soak for 15–30 minutes (or as per product label).
5. Scrub if Needed
After soaking, scrub filters with a long-handled brush to remove remaining grease.
Focus on joints, baffle folds, and corners.
6. Rinse Thoroughly
Rinse with clean hot water to remove all detergent and debris.
7. Air Dry Completely
Place filters on a drying rack or drainboard.
Allow to fully dry before reinserting, never reinstall wet filters (risk of grease drip/fire).
8. Reinstall into Hood
Ensure each filter locks securely into place.
Check that airflow direction arrows (if present) face the correct way.
Optional: Dishwasher Method
If your filters are dishwasher-safe (check manufacturer label):
Rinse filters to remove heavy grease.
Place in upright position in commercial dishwasher.
Use non-abrasive, degreasing detergent.
Allow to air dry before reinstalling.
🚫 Don’ts
❌ Don’t use abrasive tools like steel wool, can damage filter casing.
❌ Don’t reinstall filters that are still wet or dripping.
❌ Don’t use harsh industrial chemicals not certified for food areas.
❌ Don’t delay cleaning, clogged filters reduce airflow and raise fire risk.
✅ Best Practices
Check off on checklist on Leafe, signed off by staff or management.
Label filters with cleaning dates (or keep digital tracking).
Combine this with regular hood duct inspections every 3–6 months by professionals.
