Pulled beef is joining the Little Bao Boy menu on April 20th. It's a pre-cooked, frozen product, so the prep process is simple - but it has to be done right every time to hit the quality standard your customers expect.
📦 DELIVERY + STORAGE
Your pulled beef will arrive from April 20th. You'll receive a WhatsApp notification the day before your delivery.
Action required before it arrives:
Confirm you have freezer space cleared and ready
Brief your team on the new product, storage process, and prep steps below
Storage process:
Move to freezer immediately on delivery - do not leave at ambient
Transfer to fridge the night before use to defrost overnight
Reheat in microwave for ~2 minutes until piping hot, then mix with the customer's chosen sauce
⚠️ Important: No shortcuts on defrosting. Rushing it will damage quality, safety and consistency - all of which are on you to protect.

✅ GO-LIVE CHECKLIST
Only activate beef menu items once all of the following are confirmed:
Freezer space cleared and beef stored correctly on delivery
Team briefed and all training videos watched
Beef fully defrosted and ready to use
Builds tested at least once in kitchen
Packaging and station set up correctly
To activate: go to Sessions Serve tablet → Settings → Manage Availability and switch on Beef Bao, Beef Bowl, and Beef Fries.

HOW TO STEAM BAO
Bao steaming - Follow the exact method. Bao must be soft, fluffy, and fully heated through every time.
DIETARY SEPARATION
There have been some instances of meat and vegetarian baos being sent within the same takeaway container, leading to complaints and unnecessary 1* reviews.
Meat and vegetarian baos must always be packed separately, in different containers. No exceptions. This is a dietary requirement and a customer trust issue.
